I love to cook and I love, love, love peanut butter.  I like it on fruit, in sandwiches or sauces.  The possibilities when cooking with peanut butter are endless.  But one of mine and my family’s favorite ways to eat peanut butter is in the delicious, melt in your mouth cookies.  I have tried many different recipes for peanut butter cookies and this recipe is still my favorite.   I have been making these for many years and they are one of my most requested cookies.  So happy to share this favorite family recipe so with you and your family.

  1. In a large bowl, cream the butter, shortening, peanut butter, sugar and brown sugar on medium speed with a mixer.  Add eggs and vanilla to creamed mixture and mix on medium speed until fluffy. 
  2. Whisk flour, baking powder, baking soda and salt in a medium bowl.  At low speed, add dry ingredients to wet ingredients one third at a time.  Chill dough for 1 hour.
  3. Shape dough into 1 inch balls and roll in sugar and criss-cross with a fork. Place two inches apart on cookie sheet lined with parchment paper.  Bake at 350 degrees  for 14 to 18 minutes or until browned.  Cool and store in airtight container.  Will stay fresh for up to one week.  Makes 6 dozen
