Do you ever crave fresh cranberries? I know I do. While most people think of cranberries as a fall holiday food, they are good anytime. I usually buy extra bags of fresh cranberries in the fall and freeze them to use year round.
I’m not a fan of the traditional, jellied cranberry sauce. Definitely not on my “go to” food list. But I do love cranberries in salads, relishes, cocktails and baked goods. Yum! My absolute favorite dish using this delicious, healthy fruit is my Fresh Cranberry Salad.
The original version of this recipe was shared with me by my late friend, Roger (Arty) O’Shields. He brought his mom’s Cranberry Salad to a company potluck lunch and it was love at first bite. :). I immediately asked for and received a copy of the recipe. I don’t know the source of the original recipe but this is my version and I hope that your family loves it as much as mine does.
Add 1 cup of boiling water to Jello and stir until crystals are dissolved.
Chop cranberries in food processor pushing down the cranberries when they work their way up the bowl. Place cranberries in large bowl.
Peel and core Apple. Chop Apple in food processor. Add to cranberries and mix well.
Add sugar and ½ cup of pecans to cranberry/Apple mixture and mix well. Cover and chill 6-8 hours or overnight.
Spoon into serving dish and garnish with 1 tbsp of chopped pecans.
